Jenné Cakes with Sweet Potato Apple Coulis

Eating my rendition of Johnny Cakes with fantasy Coulis for breakfast on my 23rd Birthday.
It's a Happy Birthday for me, and for my brand new food blog.







Jenné (Johnny) Cakes with Sweet Potato Apple Coulis (for 2)

PANCAKES

1/2 cup Whole Wheat Pastry Flour
1/2 cup Stone Ground Yellow Corn Meal
1 tablespoon brown sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 tsp Pumpkin Pie Spice
1/2 tsp Cinnamon
2 Tbsp Melted and Browned Butter
1 Egg
1 cup buttermilk (or 1/2 cup Yogurt; 1/2 cup soy or almond milk)
2 teaspoons vanilla extract
maple syrup!


COULIS

Medium Sized Sweet Potato peeled and diced
2 Small Granny Smith (or Golden Delicious Apples) Diced
1 Tsp Cinnamon
1/2 Tbsp Melted Butter for baking

Start with the Coulis, which can be prepared the night before. Bake Diced Sweet Potato and Apples on 425 degrees for 30 minutes, or until fragrant and soft.
When soft, transfer the diced goodness to a small saucer heated LOW, and add REAL MAPLE SYRUP and a bit of lemon juice to taste. Mash a bit with fork or potato masher, careful to keep some of the Apples' and Sweet Potato's Shape. Voila!

Pancakes:
In a small saucer melt butter and brown, then add the PUMPKIN PIE SPICE AND CINNAMON, remove from heat and allow to cool.

In a large mixing bowl combine all dry ingredients. In another mixing bowl, combine wet ingredients, then add COOLED BUTTER to wet ingredient. Stir, and add to Dry Ingredients.
Be careful not to over-mix. Stir just enough to combine the ingredients. Now, allow the batter's goodness to meld, and take some time to heat up the skillet (or pan) and melt some butter, keep the skillet at medium heat for slow and thorough cooked pancakes.

Scoop the batter into the skillet, and make your Jenné Cakes. While they're cooking, heat up the Coulis. Put cooked Pancakes on heated plate, until ready to serve!

TO EAT:
Dollop the Coulis on Top of the Jenné Cakes, and pour over some REAL MAPLE SYRUP (no Aunt Jemima or anything else with High Fructose Nonsense!)
Sprinkle some ground ginger and raisins on top. Take it all in, then DIG IN!
