Roasted Plantains and Oatmeal
Cooking breakfast for myself is one of my most important practices. Along with my morning journaling and meditation (I'm like an old lady...), a good hearty breakfast just puts my day in motion.
My boyfriend, Maxx, is really into Plantains nowadays. He buys them all the time, and experiments with cooking them, sometimes without any success...like the other day when he attempted to roast a Green Plantain in the skin. After 30 minutes in a hot oven, the only change it had gone through was a blackening of its skin. On the inside it was still starchy and hard as an unbaked potato. Poor Maxx.
For my breakfast this morning, I decided to have a roasted Plantain with my oatmeal.
The roasting was easy. I simply cut one Plantain into 1/2 inch pieces, and drizzled it with olive oil, a bit of Sea Salt, Pumpkin Pie Spice (nutmeg would do), and brown sugar. And on a baking sheet, I stuck it in my toaster oven on 425 for about 30 minutes, and VOILA!
On top of oatmeal with raisins, flax, cinnamon, and ginger, AND brown sugar! And my day has been sooo sweet!






Just tried the roasted plantain... as a Cuban gal, I was a bit wary of roasting, rather than deep frying them, lol, but it was pretty delish!

Im glad you liked them! Honestly, I prefer them deep fried, but for breakfast, why not keep it healthy and delicious!
