Peach Guacamole

The new chapter of my life, and of Sweet Potato Soul begins tomorrow.

Riding the subway home after a beautiful dinner celebration at Pure Food and Wine with my co-workers felt surreal.  Saying goodbye, however temporary, brought me to a sense of presence I only experience in genuine human interactions and deep deep meditation.  I am moving on with my life, I am leaving the comfort of New York City to spice things up a bit.  Big things are in the works for me, I have faith in this.

So tomorrow the journey begins.  It will be my very first 20 hour plane trip and my first time to Asia.
I am excited beyond words.

Beyond words.
I relish this feeling.

Peach Guacamole 

2 large ripe avocados, diced
1 large ripe peach, diced
1 Tbsp jalapeño pepper, minced
1/2 tsp habanero pepper, minced *(optional for extra spice)
2 Tbsp red onion, finely diced
1 Tbsp lime juice, fresh
1/2 cup cilantro, chopped
1/2 tsp sea salt
1/4 tsp black pepper, freshly ground

In a large mixing bowl combine avocado, jalapeño, onion, lime juice, cilantro, salt and pepper.  Mash with the back of a fork, and stir to incorporate the ingredients.  Mash until the guacamole is creamy but still has a few chunks of avocado.  Add the diced peaches and stir well.  Enjoy.

Ooh have fun in Thailand! This guac looks fantastic! I love spicy guac and must find a way to rig the weather so I can have an avocado tree in my backyard.. ;)
