A year ago I was about to say goodbye to beautiful Thailand. I miss that place, the land of smiles; paradise of young coconuts. I miss my little family on Koh Samui; Ta, Miho and Winda. Sitting on the floor at the back of Ta's shop eating and making raw treats was magical. Every day I'd walk along the beach to get there was bliss. When I think about Thailand I feel like a little bit of me is still there. I think if I went back I'd feel whole again.
Sweet Potato Soul is my "Soul Food" journal. To me soul food is food made with love, joy, creativity, and passion; with lots of flavor and nourishment too. The recipes I share vegan and healthy. I want to prove that eating vegan can be easy and full of flavor and substance.
The Sweet Potato is my favorite food. When I was a picky kid I ate them, and when I hated cooking (because I thought it would make me "too domestic") I would always cook them, and now as a passionate developing chef, they're still my favorite food to eat and to create with.
