I promised you plums, and plums I will deliver!
These last 5 days have been full of excitement for me. I shot a commercial all day on Friday, my mom came to visit on Saturday, I taught a cooking class at Whole Foods, a workshop at Pure Yoga, and spent priceless time with my mother, enjoying this beautiful city. Still, despite my busy long weekend, I couldn't wait to share this recipe for plum tomatillo salsa/salad with you. Is it a salsa or a salad? It can be either. Eaten with tortilla chips, it's certainly a refreshing summer salsa. Tossed with beans and avocado, you've got yourself a delicious salad with a nice tang.
Make sure you try this dish before summer is over. Though I am looking forward to fall produce, it's always hard to say goodbye to summer's bounty.

Plum Tomatillo Salsa/Salad
4 ripe plums, diced
4 ripe tomatillos, diced
juice from 1/2 lime
1 tsp cumin
dash cayenne pepepr
1/2 tsp sea salt
1 tbsp olive oil
1/2 cup cilantro, chopped
2 cups black beans or chickpeas (optional)
Stir all ingredients together in a bowl. Season with more lime, salt and pepper to taste. Serve alone or with corn tortillas, rice and/or beans.
