Speaking of health goals, what if I told you you can reach yours while eating amazingly delicious vegan food? That's what I lay out in the 21-Day Vegan Blueprint, and this is one of my favorite recipes in the program. Amazing beet burgers! I've taken these burgers to numerous events, and cooked them for all of my clients. Everyone agrees, they are delicious! I hope you'll give them a try too.
(makes 6. Can be baked, grilled or cooked in a skillet.)
1 raw beet, peeled and diced into tiny cubes (about ½ inch thick)
2 raw carrots, shredded (about ¾ cup)
2 cloves of garlic, minced
3/4 c raw walnuts, chopped (or 1/2 cup pumpkin seeds)
1 ½ cups black beans (or 1 can, drained and rinsed)
a handful of parsley or cilantro
1 tsp hot paprika
1 ½ tsp cumin
1 tsp sea salt
1 tsp black pepper
¾ cup cooked rice (any kind will do), or oat flour/bran
If baking, preheat oven to 350°.
Heat about 2 tablespoons of olive oil in a skillet, then add the minced garlic to saute. After about 30 seconds, toss in the diced beets and carrots. Stir, reduce heat, and cover with a lid to speed cooking. When the veggies have softened, blend half of them in a food processor with half of the rice and the black beans (if your food processor is small, do this in batches.)
Place all of the ingredients into a large mixing bowl. Stir well (or use your hands) to combine all of the ingredients and season with more sea salt to taste.
Form into tightly packed patties, and place on a parchment paper lined baking sheet, or on the grill. If baking, cook for 35 minutes. Grill for 8-10 minutes each side.
Serve with avocado or tahini on a bun or over salad greens. Also amazing with cucumbers, and shredded carrots.
